The Gulf Shrimp Wedge Salad is a delicious mix of new tastes and textures. A satisfying and flavorful salad that's great for any event is made with grilled Gulf shrimp, crisp iceberg lettuce, juicy cherry tomatoes, and the rich tanginess of blue cheese.
Ingredients:
- 12 Gulf shrimp, peeled and deveined
- 1 head iceberg lettuce, cut into wedges
- 1 cup cherry tomatoes, halved
- 1/2 cup crumbled blue cheese
- 1/4 cup red onion, thinly sliced
- 1/4 cup bacon bits
- 2 tablespoons olive oil
- 1 lemon, juiced
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions:
Warm up a grill or grill pan over medium-high heat
Put the Gulf shrimp in a bowl and add the olive oil, lemon juice, salt, and pepper
The shrimp should be grilled for two to three minutes on each side, or until they are pink and fully cooked
Put the wedges of iceberg lettuce on a platter to serve
Put the bacon bits, cherry tomatoes, red onion, and grilled shrimp on top of the lettuce wedges
Add broken up blue cheese to the salad
Add fresh parsley as a garnish
Pour over the salad any dressing that's left over from the shrimp marinade
Serve right away and enjoy!
