Healthy Chicken & Cheese Taquitos



These Healthy Baked Chicken and Cheese Taquitos are a delicious and nutritious twist on the classic taquito recipe. Packed with lean protein and wholesome ingredients, they make for a satisfying snack or meal.

Ingredients:

  • 2 cups shredded cooked chicken breast
  • 1 cup shredded reduced-fat cheese
  • 1/4 cup salsa
  • 1/4 cup chopped fresh cilantro
  • 1 teaspoon ground cumin
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 12 small whole wheat tortillas
  • Cooking spray

Instructions:

Preheat oven to 400F 200C

In a large bowl, mix together shredded chicken, cheese, salsa, cilantro, cumin, garlic powder, salt, and black pepper

Warm tortillas according to package instructions to make them more pliable

Place about 1/4 cup of the chicken mixture onto each tortilla, spreading it evenly along one edge

Roll up tightly and place seam-side down on a baking sheet lined with parchment paper

Lightly spray taquitos with cooking spray

Bake for 15-20 minutes, or until the taquitos are golden and crispy

Serve hot with additional salsa or guacamole for dipping, if desired
