Ingredients:
- 2 cups all-purpose flour
- 1/2 cup granulated sugar
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1 tsp ground cinnamon
- 1/2 tsp ground nutmeg
- 1 cup unsweetened applesauce
- 1/2 cup apple cider
- 1/4 cup vegetable oil
- 1 tsp vanilla extract
- For the Stewed Apple Pie Filling:
- 2 cups diced apples peeled and cored
- 1/4 cup brown sugar
- 1/2 tsp ground cinnamon
- 1/4 tsp ground nutmeg
- 1/4 cup water
- 1 tsp cornstarch
Instructions:
Preheat your oven to 350F 175C
Grease a muffin tin or line it with muffin liners
In a large mixing bowl, whisk together the flour, granulated sugar, baking powder, baking soda, salt, cinnamon, and nutmeg
In a separate bowl, combine the applesauce, apple cider, vegetable oil, and vanilla extract
Pour the wet ingredients into the dry ingredients and stir until just combined
Be careful not to overmix; it's okay if there are a few lumps
Spoon the muffin batter into the prepared muffin tin, filling each cup about 2/3 full
To make the Stewed Apple Pie Filling, combine the diced apples, brown sugar, cinnamon, nutmeg, water, and cornstarch in a small saucepan
Cook over medium heat, stirring frequently, until the apples are tender and the mixture thickens, about 5-7 minutes
Remove from heat
Spoon a generous spoonful of the stewed apple pie filling onto the center of each muffin batter
Bake in the preheated oven for 18-20 minutes, or until a toothpick inserted into the muffin not the filling comes out clean
Remove the muffins from the oven and allow them to cool in the tin for a few minutes before transferring them to a wire rack to cool completely
Once cooled, you can optionally dust the muffins with powdered sugar or cinnamon for extra flavor
