A delightful burst of flavor comes from the sweet corn, the creamy avocado, and the earthy black beans in this cool salsa. Wonderful for dipping chips in or putting on tacos!
Ingredients:
- 1 cup corn kernels fresh or frozen, thawed
- 1 avocado, diced
- 1 can 15 ounces black beans, drained and rinsed
- 1/2 red onion, finely diced
- 1/4 cup chopped fresh cilantro
- 1 jalapeno pepper, seeded and finely diced
- 2 tablespoons lime juice
- 1 tablespoon olive oil
- Salt and pepper to taste
Instructions:
In a large bowl, combine the corn, avocado, black beans, red onion, cilantro, and jalapeno pepper
Drizzle with lime juice and olive oil
Season with salt and pepper, to taste
Gently toss until all ingredients are evenly coated
Refrigerate for at least 30 minutes to allow flavors to meld
Serve chilled and enjoy!
